Instructions
- Preheat the oven to 375°F.
- In a large bowl, mix the dry ingredients: oat flour, all purpose flour, turbinado sugar, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together the wet ingredients: vanilla, pumpkin, egg, maple syrup, and olive oil.
- Combine the wet and dry ingredients, stirring until just mixed. Add mini chocolate chips if desired.
- Scoop small amounts of batter onto a parchment-lined baking sheet and sprinkle with extra turbinado sugar.
- Bake for 10-12 minutes until lightly golden.
- For the glaze, melt butter in a saucepan, then mix in powdered sugar, maple syrup, and milk until smooth.
- Drizzle the glaze over the baked pumpkin bites once they are cool.
