Ingredients

The Pumpkin Bites

  • 1 ¼ cup oat flour
  • ¾ cup all purpose flour
  • ¼ cup turbinado sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla
  • ¼ cup canned pumpkin
  • 1 large egg
  • ½ cup maple syrup
  • 3 tablespoons olive oil
  • ½ cup mini chocolate chips (optional)

The Glaze

  • 2 tablespoons butter
  • 1 ¼ cups powdered sugar
  • 1 tablespoon maple syrup
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, mix the dry ingredients: oat flour, all purpose flour, turbinado sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk together the wet ingredients: vanilla, pumpkin, egg, maple syrup, and olive oil.
  4. Combine the wet and dry ingredients, stirring until just mixed. Add mini chocolate chips if desired.
  5. Scoop small amounts of batter onto a parchment-lined baking sheet and sprinkle with extra turbinado sugar.
  6. Bake for 10-12 minutes until lightly golden.
  7. For the glaze, melt butter in a saucepan, then mix in powdered sugar, maple syrup, and milk until smooth.
  8. Drizzle the glaze over the baked pumpkin bites once they are cool.
