Low Carb Shrimp Scampi

The shrimp

shrimp, peeled and de-veined
The sauce

tablespoons
Finlandia butter

cloves
garlic, roughly chopped

cup
chardonnay

¼
cup
lemon juice

¼
teaspoon
red pepper flakes

cup
chopped parsley

scallions
sliced, white and light green part

cup
shredded Parmesan cheese

salt and black pepper
Optional ingredients

cherry tomatoes, halved
Instructions
- Peel and de-vein the shrimp and prepare the other ingredients.
- Heat a large sauté pan over medium heat and melt the butter.
- Add the garlic and sauté until it softens.
- Add the shrimp and cook until the bottom half turns pink.
- Flip the shrimp, add red pepper flakes, lemon juice, and wine.
- Cook for a minute to reduce the liquid.
- Remove from heat and stir in parsley and scallions. Season with salt and pepper.
- Serve topped with Parmesan cheese and optional cherry tomatoes.
