Low Carb Shrimp Scampi

Ingredients

The shrimp

  • 1 ¼ pound shrimp, peeled and de-veined

The sauce

  • 4 tablespoons Finlandia butter
  • 3 cloves garlic, roughly chopped
  • ¼ cup chardonnay
  • ¼ cup lemon juice
  • ¼ teaspoon red pepper flakes
  • ¼ cup chopped parsley
  • 2 scallions sliced, white and light green part
  • ½ cup shredded Parmesan cheese
  • to taste salt and black pepper

Optional ingredients

  • 10 ounces cherry tomatoes, halved

Instructions

  1. Peel and de-vein the shrimp and prepare the other ingredients.
  2. Heat a large sauté pan over medium heat and melt the butter.
  3. Add the garlic and sauté until it softens.
  4. Add the shrimp and cook until the bottom half turns pink.
  5. Flip the shrimp, add red pepper flakes, lemon juice, and wine.
  6. Cook for a minute to reduce the liquid.
  7. Remove from heat and stir in parsley and scallions. Season with salt and pepper.
  8. Serve topped with Parmesan cheese and optional cherry tomatoes.
