Low Carb Shrimp Scampi

Ingredients

The shrimp

  • 1 ¼ pound shrimp, peeled and de-veined

The sauce

  • 4 tablespoons Finlandia butter
  • 3 cloves garlic, roughly chopped
  • ¼ cup chardonnay
  • ¼ cup lemon juice
  • ¼ teaspoon red pepper flakes
  • ¼ cup chopped parsley
  • 2 scallions sliced, white and light green part
  • ½ cup shredded Parmesan cheese
  • to taste salt and black pepper

Optional ingredients

  • 10 ounces cherry tomatoes, halved

Instructions

  1. Peel and de-vein the shrimp, and prepare the other ingredients.
  2. Heat a large sauté pan over medium heat and melt the butter.
  3. Add the garlic and sauté until it begins to soften.
  4. Add the shrimp and cook until the bottom half turns pink, then flip them over.
  5. Add the red pepper flakes when the shrimp are almost cooked through.
  6. Pour in the lemon juice and wine, and cook for about a minute to reduce the liquid.
  7. Turn off the heat and stir in the parsley and scallions, seasoning with salt and pepper.
  8. Plate the shrimp and top with Parmesan cheese if desired.
