Ingredients

Sponge

Dough

  • ½ teaspoon baking powder

  • 1 ½ teaspoons salt

Filling

  • 8-12 tablespoons salted butter, softened
  • ¾ cup packed light brown sugar
  • 1 tablespoon cinnamon
  • ¼ teaspoon cardamom (optional)

Icing

  • 2 ounces cream cheese, softened
  • ½ cup salted butter, softened
  • 1 pinch salt
  • 2 tablespoons milk or heavy cream
  • ½ teaspoon vanilla extract
  • 1 ¾ cups powdered sugar

Instructions

  1. Prepare the sponge by mixing sugar, oil, and scalded milk; let it sit until warm.
  2. Add flour and yeast to the sponge mixture and mix until no dry streaks remain.
  3. Cover and let the sponge rise until puffy, about 45 minutes to 1 hour.
  4. Incorporate additional flour, baking powder, baking soda, and salt into the sponge mixture.
  5. Mix until the dough is cohesive and smooth, then let it rise until doubled in size.
  6. Roll the dough into a rectangle and spread softened butter over it.
  7. Sprinkle the brown sugar, cinnamon, and cardamom over the butter.
  8. Roll the dough tightly into a log and cut it into 12 pieces.
  9. Place the rolls on a baking pan, cover, and let them rise until puffy.
  10. Bake at 350°F for 18-25 minutes until golden.
  11. Prepare the icing by mixing cream cheese and butter, then add salt, milk, vanilla, and powdered sugar.
  12. Frost the warm rolls and serve.
