Ingredients

The base

  • 1 ½ cups almond or coconut milk
  • 1 ½ cups water
  • 1 ½ cups gluten-free rolled oats
  • ½ cup chopped apple
  • 1 large carrot or zucchini, shredded or julienned
  • ½ cup chopped walnuts
  • ¼ cup ground flaxseed or chia seed
  • ½ to 1 Tablespoon cinnamon
  • pinch sea salt
  • cup raisins or other chopped dried fruit (optional)

Optional toppings and mix-ins

  • ¼ cup maple syrup or coconut sugar
  • 1 serving protein powder
  • to taste fresh blueberries
  • to drizzle coconut milk

Instructions

  1. Grease the inner pot of a 6-quart Instant Pot and add the water and milk.
  2. Whisk in the oats, apple, carrot, walnuts, flaxseed, cinnamon, and salt.
  3. Lock the Instant Pot lid and set the vent to closed.
  4. Select MANUAL mode and cook on high pressure for 4 minutes, then allow a natural release for 12-15 minutes.
  5. Stir in any optional mix-ins after cooking.
  6. Serve warm or store in mason jars for meal prep.
