Grilled Banana Parfait with Rum Sauce

Ingredients

The parfait

  • 4 pieces ripe bananas
  • 10 pieces large strawberries
  • 1 tbsp cinnamon
  • 1 tbsp brown sugar
  • 1 cup mini vanilla wafers
  • 1 pint vanilla ice cream or gelato

Rum sauce

  • ¼ cup brown sugar
  • ½ tbsp butter
  • ¼ cup rum

Instructions

  1. Slice the bananas lengthwise with the peels on and sprinkle with cinnamon and brown sugar.
  2. Grill the bananas on direct heat until char marks form on both sides.
  3. In a grill-friendly pot, combine butter, remaining brown sugar, and rum, and place on indirect heat to caramelize.
  4. Remove the grilled bananas and rum sauce from the grill.
  5. Peel and slice the bananas.
  6. In a glass, layer ice cream, vanilla wafers, banana slices, and strawberries.
  7. Pour the rum sauce over the layered parfait.
