Ingredients

The brownie base

  • cup all-purpose flour
  • cup unsweetened cocoa powder
  • 1 Tbsp cornstarch
  • ½ tsp salt
  • 1 cup granulated sugar
  • ¾ cup packed light-brown sugar
  • ½ cup unsalted butter, melted
  • ¼ cup vegetable or canola oil
  • 3 large eggs
  • 2 tsp vanilla extract
  • cup mini semi-sweet chocolate chips

The frosting and toppings

  • 6 oz cream cheese, softened
  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • various colors fresh fruit for topping (e.g., strawberries, raspberries, kiwi, blueberries, blackberries, bananas)
  • 2 Tbsp apple jelly (optional)

Instructions

  1. Preheat the oven to 325°F and prepare a 12-inch deep dish pizza pan or cake pan by buttering and dusting it with cocoa powder.
  2. In a bowl, whisk together the flour, cocoa powder, cornstarch, and salt.
  3. In a separate bowl, mix the granulated sugar, brown sugar, melted butter, and vegetable oil.
  4. Add the eggs one at a time, mixing in the vanilla with the last egg.
  5. Combine the flour mixture with the wet ingredients and mix until just combined, then fold in the chocolate chips.
  6. Pour the batter into the prepared pan and bake for 18-22 minutes until a toothpick comes out clean.
  7. Let the brownies cool completely on a wire rack.
  8. For the frosting, blend the cream cheese, powdered sugar, and vanilla until smooth, then spread over the cooled brownies.
  9. Refrigerate the frosted brownies for at least 30 minutes.
  10. Add fresh fruit just before serving, and if desired, brush with warmed apple jelly for shine.
