Instructions
- Line a 9×13 inch pan with foil and extend the foil over the edges.
- Bake the brownies according to the package instructions, then cool completely and freeze.
- Soften the mint chip ice cream until stirrable and spread it over the brownie layer.
- Return the pan to the freezer to chill.
- Heat the cream until hot, pour it over the chocolate chips, cover, and let sit for 5 minutes.
- Whisk the chocolate mixture until smooth, then stir in the peppermint extract and let it cool.
- Drizzle the cooled ganache over the ice cream layer and sprinkle crushed Oreos on top, pressing them in gently.
- Spread the whipped topping over the Oreos and add any optional toppings.
- Freeze for several hours or up to several days until firm.
- Before serving, let sit at room temperature for 10-15 minutes to soften, then lift out using the foil and cut into squares.
