Ingredients

The brownie base

  • 1 box brownie mix

The ice cream layer

  • quart mint chip ice cream

The ganache layer

  • 1 cup dark or semisweet chocolate chips
  • ½ cup cream
  • ¼-½ teaspoon pure peppermint extract

The topping

  • 15-20 pieces Oreo cookies
  • 1 8-ounce container whipped topping
  • optional green food coloring
  • optional shaved or curled chocolate or sprinkles

Instructions

  1. Line a 9×13 inch pan with foil and extend the foil over the edges.
  2. Bake the brownies according to the package instructions, then cool completely and freeze.
  3. Soften the mint chip ice cream until stirrable and spread it over the brownie layer.
  4. Return the pan to the freezer to chill.
  5. Heat the cream until hot, pour it over the chocolate chips, cover, and let sit for 5 minutes.
  6. Whisk the chocolate mixture until smooth, then stir in the peppermint extract and let it cool.
  7. Drizzle the cooled ganache over the ice cream layer and sprinkle crushed Oreos on top, pressing them in gently.
  8. Spread the whipped topping over the Oreos and add any optional toppings.
  9. Freeze for several hours or up to several days until firm.
  10. Before serving, let sit at room temperature for 10-15 minutes to soften, then lift out using the foil and cut into squares.
