Farmers Market Potato & Asparagus Pizza

Ingredients

The pizza base

  • 1 recipe pizza dough
  • Extra-virgin olive oil for drizzling
  • 1 clove garlic, minced

The toppings

  • 6 to 8 spears thick asparagus
  • 3 to 4 small Yukon gold potatoes
  • cups gruyere or white cheddar cheese
  • 2 tablespoons chopped chives
  • 2 radishes thinly sliced (optional)
  • Squeezes of fresh lemon juice
  • 5 flowers chive blossoms (optional)
  • 1 tablespoon thyme flowers or fresh thyme leaves
  • cup shaved fresh Parmesan cheese
  • sea salt to taste
  • freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 450°F.
  2. Peel the asparagus into ribbons and chop the remaining bits.
  3. Slice the potatoes thinly using a mandoline or knife.
  4. Stretch the pizza dough to fit a pizza stone or pan and brush with olive oil.
  5. Sprinkle minced garlic over the dough, then add three-fourths of the cheese.
  6. Layer the potatoes in circles on top of the cheese.
  7. Add the remaining cheese and half of the chives, then bake for 12 to 14 minutes.
  8. Remove the pizza and top with radish slices, asparagus ribbons, and lemon juice.
  9. Sprinkle with salt, pepper, chive blossoms, and thyme.
  10. Return to the oven for 3 minutes to warm the toppings.
  11. Finish with Parmesan cheese and cracked black pepper before serving.
