Ingredients

Dough

  • 21 oz water
  • 35 oz 00 pizza flour
  • 1 oz salt
  • 0.07 oz fresh yeast
  • 0.04 oz instant dry yeast

Toppings

  • to taste good quality tomatoes
  • to taste mozzarella
  • to taste toppings of your choice

Instructions

  1. Step 1: Dissolve the yeast in water, then mix in half the flour for 30 seconds.
  2. Step 2: Add the remaining flour and salt, mixing for another 30 seconds.
  3. Step 3: Knead the dough for 10 minutes, then cover and rest for 10 minutes.
  4. Step 4: Shape the dough into a ball, cover, and let it rest for 45 minutes.
  5. Step 5: Portion the dough into 9oz pieces and place in oiled containers to proof for 8 hours at room temperature.
  6. Step 6: Preheat your pizza oven to 850°F, then shape a dough ball and place it on a floured peel.
  7. Step 7: Adjust the pizza on the peel and ensure it moves freely before transferring to the oven.
  8. Step 8: Bake for 20-30 seconds, turning every 20-30 seconds for a total of 90 seconds or until done.
