Strawberry Syrup

Instructions
- In a large saucepan, combine strawberries, lemon juice, sugar, and 2 Tbsp of water and bring to a boil over medium-high heat, stirring frequently.
- Reduce heat slightly and let it boil until the juices are extracted and strawberries soften, about 5 – 6 minutes, stirring occasionally.
- In a small bowl, whisk together the remaining 2 Tbsp of water and cornstarch until smooth.
- Pour the cornstarch mixture into the strawberry mixture and let it boil while stirring constantly for 1 minute.
- Remove from heat and let cool slightly. Store in an airtight container in the refrigerator for up to 3 days.
