Paleo Gravy
Ingredients
The gravy base

chicken stock or Kettle & Fire Bone Broth

onions, chopped

garlic, sliced

kudzu

celtic sea salt
Optional ingredients

poultry gizzards

pan drippings
Instructions
- In a medium saucepan, bring the stock, gizzards, onions, and garlic to a boil.
- Reduce heat to medium and simmer for 20-30 minutes until the onions are soft.
- Add the drippings from the roasting pan and simmer for an additional 5 minutes.
- Strain out the solids and transfer the broth, onion, and garlic to a blender, discarding the gizzards.
- Puree the mixture until smooth.
- Transfer the mixture to a skillet and reheat the gravy until boiling.
- In a small dish, mix kudzu with ¼ cup water until dissolved.
- Stir the kudzu mixture into the gravy until combined and it begins to thicken.
- Simmer the gravy until it reaches the desired thickness, which can take 10 to 30 minutes, then add salt to taste.
- Serve the gravy.
