Paleo Gravy

Ingredients

The gravy base

  • 4 cups chicken stock or Kettle & Fire Bone Broth
  • 2 medium onions, chopped
  • 2 cloves garlic, sliced
  • 1 tablespoon kudzu
  • ½ teaspoon celtic sea salt

Optional ingredients

  • 1 cup poultry gizzards
  • 1 cup pan drippings

Instructions

  1. In a medium saucepan, bring the stock, gizzards, onions, and garlic to a boil.
  2. Reduce heat to medium and simmer for 20-30 minutes until the onions are soft.
  3. Add the drippings from the roasting pan and simmer for an additional 5 minutes.
  4. Strain out the solids and transfer the broth, onion, and garlic to a blender, discarding the gizzards.
  5. Puree the mixture until smooth.
  6. Transfer the mixture to a skillet and reheat the gravy until boiling.
  7. In a small dish, mix kudzu with ¼ cup water until dissolved.
  8. Stir the kudzu mixture into the gravy until combined and it begins to thicken.
  9. Simmer the gravy until it reaches the desired thickness, which can take 10 to 30 minutes, then add salt to taste.
  10. Serve the gravy.
