Ingredients

The base

  • 1 quart organic low sodium chicken broth
  • 2 large onions, roughly chopped
  • 6-8 cloves peeled garlic
  • ½ teaspoon dried thyme

Seasonings

  • to taste Diamond Crystal kosher salt
  • to taste freshly ground black pepper
  • 1 tablespoon coconut aminos

Fats

  • 2 tablespoons ghee or fat of choice
  • splash heavy cream (optional)

Instructions

  1. Combine the broth, onions, garlic, and thyme in a medium saucepan and bring to a boil.
  2. Reduce the heat to low and let it simmer for about 30 minutes until the onions and garlic are soft.
  3. Taste the mixture and adjust with salt, pepper, and coconut aminos as needed.
  4. Transfer everything to a blender, add the ghee, and blend until smooth.
  5. Optionally, add heavy cream for a creamier texture.
