Paleo Gravy

Ingredients

  • 1 quart Chicken Stock
  • 2 medium onions, coarsely chopped
  • 2 cloves garlic
  • ½ teaspoon celtic sea salt
  • 1 tablespoon thyme, chopped
  • to taste pan drippings from roasted chicken or turkey

Instructions

  1. Heat chicken stock, onions, and garlic in a medium saucepan until boiling.
  2. Reduce heat and simmer until onions and garlic are soft, about 30 minutes.
  3. Pour pan drippings into the saucepan.
  4. Blend the mixture until smooth using a Vitamix.
  5. Return the mixture to the saucepan and reheat.
  6. Season with salt and thyme before serving.
