Paleo Gravy
Ingredients
The gravy base

chicken stock or Kettle & Fire Bone Broth

onions, chopped

garlic, sliced

kudzu

teaspoon
celtic sea salt

Instructions
- 1. In a medium saucepan, bring the stock, gizzards, onions, and garlic to a boil.
- 2. Reduce heat to medium and simmer for 20-30 minutes until the onions are soft.
- 3. Add the drippings from the roasting pan and simmer for an additional 5 minutes.
- 4. Strain out the solids and transfer the broth, onions, and garlic to a blender, disposing of the gizzards.
- 5. Puree the mixture until smooth.
- 6. Transfer the mixture to a skillet and reheat the gravy until boiling.
- 7. In a small dish, mix the kudzu with ¼ cup of water until dissolved.
- 8. Stir the kudzu mixture into the gravy until combined and it begins to thicken, then reduce the heat.
- 9. Simmer the gravy to your desired thickness, anywhere from 10 to 30 minutes, and add salt to taste.
- 10. Serve the gravy.
