Paleo Gravy

Ingredients

The gravy base

  • 4 cups chicken stock or Kettle & Fire Bone Broth
  • 2 medium onions, chopped
  • 2 cloves garlic, sliced
  • 1 tablespoon kudzu
  • ½ teaspoon celtic sea salt

Optional ingredients

  • poultry gizzards optional
  • pan drippings from roasting pan

Instructions

  1. 1. In a medium saucepan, bring the stock, gizzards, onions, and garlic to a boil.
  2. 2. Reduce heat to medium and simmer for 20-30 minutes until the onions are soft.
  3. 3. Add the drippings from the roasting pan and simmer for an additional 5 minutes.
  4. 4. Strain out the solids and transfer the broth, onions, and garlic to a blender, disposing of the gizzards.
  5. 5. Puree the mixture until smooth.
  6. 6. Transfer the mixture to a skillet and reheat the gravy until boiling.
  7. 7. In a small dish, mix the kudzu with ¼ cup of water until dissolved.
  8. 8. Stir the kudzu mixture into the gravy until combined and it begins to thicken, then reduce the heat.
  9. 9. Simmer the gravy to your desired thickness, anywhere from 10 to 30 minutes, and add salt to taste.
  10. 10. Serve the gravy.
