Easy Paleo Gravy
Ingredients
The base

fat of choice (ghee, refined coconut oil, or drippings from cooked meat)

tapioca starch or arrowroot powder

low-sodium chicken stock (hot, but not boiling)
Seasonings

poultry seasoning

coconut aminos (optional)

Instructions
- Heat a medium saucepan over medium-low heat and add the fat.
- Once the fat is melted and heated, whisk in the tapioca starch until smooth.
- Simmer the mixture for 1 minute while whisking constantly until golden and bubbling.
- Gradually add the hot chicken stock in small increments while whisking continuously until smooth.
- Simmer the gravy for 2 to 4 minutes, whisking regularly until thickened.
- Stir in the poultry seasoning and coconut aminos, if using.
- Adjust seasoning with salt and pepper to taste, then serve warm.
