Ingredients

The cauliflower

  • 12 ounces cauliflower florets

The coating

  • cup liquid egg whites
  • cup almond meal

The sauce

  • ½ cup buffalo sauce
  • 1 tablespoon mayo
  • 1 tablespoon honey
  • 2 teaspoons rice vinegar
  • 2 teaspoons sriracha or hot sauce
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Coat cauliflower florets in egg whites, then cover in almond meal, and place on a baking sheet.
  3. Bake in the oven for 20 minutes, optionally sprinkling with salt and pepper.
  4. Prepare the sauce by mixing buffalo sauce, mayo, honey, rice vinegar, salt, and pepper in a bowl.
  5. After 20 minutes, remove the cauliflower and increase the oven temperature to 450°F.
  6. Coat the baked cauliflower in the sauce and return to the baking sheet.
  7. Bake for an additional 5-7 minutes until crispy and lightly browned.
  8. Serve immediately.
