Healthy Buffalo Cauliflower Wings

Instructions
- Preheat the oven to 400ºF and prepare a baking sheet with olive oil spray.
- Cut the cauliflower into wing-sized pieces and set aside.
- Mix the almond meal, garlic powder, smoked paprika, salt, and pepper in a bowl.
- Whisk the eggs in a separate bowl.
- Dip the cauliflower pieces in the egg wash, then coat them in the almond meal mixture.
- Spread the coated cauliflower on the baking sheet and spray with olive oil.
- Bake for 20 minutes, flip the cauliflower, and bake for an additional 10 minutes.
- Prepare the buffalo sauce by mixing the Franks Hot Sauce and maple syrup.
- Toss the baked cauliflower in the buffalo sauce until well coated.
- Return the cauliflower to the baking sheet and bake for 3-5 more minutes.
- Let the wings sit for 5 minutes before preparing the blue cheese sauce by mixing all its ingredients.
- Serve and enjoy!
