Ingredients

  • cups blanched almond flour
  • ¼ cup arrowroot powder
  • 1 tsp double acting aluminum-free baking powder
  • ¼ tsp sea salt
  • ½ cup unsalted butter, ghee, or palm shortening, softened
  • ½ cup packed coconut sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup dairy-free chocolate chips
  • ¾ cup coarsely chopped roasted macadamia nuts

Instructions

  1. Preheat oven to 350ºF/177ºC and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, arrowroot powder, baking powder, and salt.
  3. Cream together butter and coconut sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Slowly add in the dry ingredients and mix until combined.
  6. Fold in chocolate chips and macadamia nuts by hand.
  7. Scoop rounded tablespoons of dough onto the baking sheet and press them down slightly.
  8. Bake for 10-13 minutes until edges are lightly browned and centers are set.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
