Ingredients

The cookie dough

  • ½ cup vegan butter
  • 1 cup organic white sugar
  • 3 tablespoons vegan milk
  • 1 teaspoon vanilla extract
  • 1 ¾ cups flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • ¾ teaspoon sea salt

The mix-ins

  • ½ cup vegan white chocolate chips
  • ½ cup raw macadamia nuts

Instructions

  1. Cream the vegan butter and sugar together for 3 minutes.
  2. Add the vegan milk and vanilla extract, mixing for an additional 30 seconds.
  3. In a separate bowl, whisk together the flour, cornstarch, baking soda, and sea salt.
  4. Combine the dry ingredients with the wet ingredients, mixing gently until fully combined.
  5. Fold in the white chocolate chips and chopped macadamia nuts.
  6. Chill the dough in the refrigerator for 2 hours.
  7. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  8. Scoop out heaping tablespoons of dough and place them 3 inches apart on the baking sheet.
  9. Bake for 11-12 minutes, then let cool on the baking sheet for 5 minutes before transferring to a wire rack.
