Instructions
- Heat a skillet over medium-high heat and add olive oil.
- Season pork chops with garlic powder, salt, and pepper, then sear for 3-4 minutes on each side until golden brown.
- Remove the pork chops and set aside.
- In the same pan, reduce heat to medium and add olive oil, sliced mushrooms, and garlic, sautéing for 3-5 minutes until browned.
- Move the garlic and mushrooms to one side, melt butter in the pan, and sprinkle with flour, stirring until browned.
- Slowly add milk while whisking, then add salt, pepper, heavy cream, and spinach.
- Return the pork chops to the pan and cook for an additional 4-5 minutes until the sauce thickens and the pork reaches an internal temperature of 145°F.
