Ingredients

Pork Chop Ingredients

  • 1 lb boneless center cut pork chops
  • ½ tbsp olive oil
  • ½ tsp garlic powder
  • to taste salt
  • to taste black pepper

Sauce Ingredients

  • ½ tbsp olive oil
  • 8-10 cloves fresh garlic
  • 2 cups baby bella mushrooms
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 ¼ cups milk
  • 2 tbsp heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups baby spinach

Instructions

  1. Heat a skillet over medium-high heat and add olive oil.
  2. Season pork chops with garlic powder, salt, and pepper, then sear for 3-4 minutes on each side until golden brown.
  3. Remove the pork chops and set aside.
  4. In the same pan, reduce heat to medium and add olive oil, sliced mushrooms, and garlic, sautéing for 3-5 minutes until browned.
  5. Move the garlic and mushrooms to one side, melt butter in the pan, and sprinkle with flour, stirring until browned.
  6. Slowly add milk while whisking, then add salt, pepper, heavy cream, and spinach.
  7. Return the pork chops to the pan and cook for an additional 4-5 minutes until the sauce thickens and the pork reaches an internal temperature of 145°F.
