Squash Fries

Ingredients

  • 1 medium or large butternut squash
  • to coat none grapeseed oil
  • to coat none olive oil
  • 1 teaspoon celtic sea salt

Instructions

  1. Peel the squash and remove the seeds.
  2. Cut the squash into long thin slices, about ΒΌ inch thick by 2 inches long.
  3. Place the squash in a large bowl and generously coat with equal parts grapeseed and olive oils.
  4. Sprinkle with salt and toss to combine.
  5. Lay the squash fries onto 2 or 3 large baking sheets.
  6. Broil one tray at a time in the oven until crispy.
  7. Serve hot.
