Easy Oven-Baked Butternut Squash Fries

Ingredients

  • 1 whole butternut squash
  • 1-2 tbsp avocado oil
  • 2 tsp smoked paprika
  • ½ tsp sea salt
  • ½ tsp pepper

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the ends off the butternut squash and peel the skin off.
  3. Slice the squash in half lengthwise and remove the seeds.
  4. Cut the squash into long thin strips and then into shorter fry-sized pieces.
  5. In a large mixing bowl, combine the squash fries with avocado oil, smoked paprika, salt, and pepper, and toss to coat.
  6. Spread the fries evenly on the prepared baking sheet.
  7. Bake in the oven for 35-45 minutes, tossing halfway through, until browned and crispy.
