Ingredients

The Hummus

  • 1 can garbanzo beans
  • ¼ cup liquid from can
  • Tbsp tahini
  • 2 Tbsp fresh lemon juice
  • 2 small garlic cloves
  • ½ tsp cumin
  • ½ tsp salt
  • 2 Tbsp olive oil

The Layers

  • 1⅓ cups thick plain Greek yogurt
  • Tbsp fresh parsley
  • 1 Tbsp fresh dill
  • 1 cup diced English cucumber
  • 1 cup diced grape tomatoes
  • cup sliced black olives
  • ½ cup crumbled feta cheese
  • 3 Tbsp chopped red onion

Instructions

  1. Blend the garbanzo beans, tahini, lemon juice, garlic, cumin, and salt in a food processor until smooth.
  2. Slowly add olive oil and some reserved liquid from the beans while blending until the hummus reaches the desired consistency.
  3. Spread the hummus into an even layer in a baking dish.
  4. Mix Greek yogurt with parsley, dill, and remaining garlic, then spread over the hummus layer.
  5. Top with diced cucumbers, tomatoes, olives, feta, and red onions.
  6. Serve immediately with pita chips or chill before serving.
