Ingredients

The dip base

  • 1 package Sabra Roasted Garlic hummus

The toppings

  • cups finely chopped seedless cucumber
  • ¾ cup pomegranate arils
  • ¾ cup seeded/diced yellow or orange tomatoes
  • ½ cup crumbled feta cheese
  • ½ cup chopped walnuts
  • cup fresh chopped cilantro
  • 1 lemon cut in half

Instructions

  1. Toast the walnuts in a 350°F oven for about 5 minutes, tossing halfway through, then let them cool.
  2. Spread the hummus evenly on the bottom of an 8x8 glass dish.
  3. Layer the chopped cucumbers, pomegranate arils, diced tomatoes, feta cheese, toasted walnuts, and fresh cilantro on top of the hummus.
  4. Squeeze lemon juice generously over the top of the dip.
  5. If making shooters, place about 2 tablespoons of hummus at the bottom of each shooter glass and layer the remaining ingredients.
  6. Serve with gluten-free crackers or chips.
