7 Layer Mediterranean Dip

finely chopped seedless cucumber

pomegranate arils

seeded/diced yellow or orange tomatoes

crumbled feta cheese

chopped walnuts

fresh chopped cilantro

Instructions
- Toast the walnuts in a 350°F oven for about 5 minutes, tossing halfway through, then let them cool.
- Spread the hummus evenly on the bottom of an 8x8 glass dish.
- Layer the chopped cucumbers, pomegranate arils, diced tomatoes, feta cheese, toasted walnuts, and fresh cilantro on top of the hummus.
- Squeeze lemon juice generously over the top of the dip.
- If making shooters, place about 2 tablespoons of hummus at the bottom of each shooter glass and layer the remaining ingredients.
- Serve with gluten-free crackers or chips.
