Salmon Teriyaki

Ingredients

The teriyaki sauce

  • ½ cup sake
  • ¼ cup mirin
  • ¼ cup soy sauce

The salmon

  • 1 tablespoon vegetable oil
  • 4 ounces skin-on, boneless salmon fillets
  • to taste Kosher salt

Instructions

  1. Combine sake, mirin, and soy sauce in a small bowl to make the teriyaki sauce.
  2. Heat vegetable oil in a large skillet over medium-high heat and season salmon fillets with salt.
  3. Cook salmon fillets skin side down until the skin is brown and crisp, then turn and cook the other side until beginning to brown.
  4. Pour off excess fat from the skillet and bring the teriyaki sauce to a boil, reducing it by two-thirds.
  5. Add salmon back to the skillet, skin side up, and cook while spooning sauce over until the sauce is syrupy and salmon is cooked through.
  6. Transfer salmon to a platter and serve with rice, noodles, or salad.
