Salmon Teriyaki

skin-on, boneless salmon fillets

Instructions
- Combine sake, mirin, and soy sauce in a small bowl to make the teriyaki sauce.
- Heat vegetable oil in a large skillet over medium-high heat and season salmon fillets with salt.
- Cook salmon fillets skin side down until the skin is brown and crisp, then turn and cook the other side until beginning to brown.
- Pour off excess fat from the skillet and bring the teriyaki sauce to a boil, reducing it by two-thirds.
- Add salmon back to the skillet, skin side up, and cook while spooning sauce over until the sauce is syrupy and salmon is cooked through.
- Transfer salmon to a platter and serve with rice, noodles, or salad.
