Instructions
- Sprinkle salt over the salmon fillets on both sides and let them sit for 10 minutes.
- Mix soy sauce, sake, mirin, and sugar in a small saucepan over medium heat until the sugar dissolves and set aside.
- Pat dry the salmon fillets with a kitchen towel and dust with plain flour, removing any excess flour.
- Heat the oil in a frying pan and add the salmon fillets skin side down.
- Cook the fillets for 2 minutes over medium-high heat, then turn them over.
- Add the teriyaki sauce to the pan and simmer until it thickens and the salmon is cooked through, occasionally drizzling the sauce over the fillets.
- Serve with plain cooked rice.
