Mexican Beer Spiked Churros with Chocolate Dulce De Leche

Ingredients

The churros

  • 1 cup mexican beer
  • 3 tablespoons unsalted butter
  • 2 tablespoons packed brown sugar
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon vanilla
  • canola oil for frying
  • ¼ cup granulated sugar
  • 2 teaspoons cinnamon

The chocolate dulce de leche

  • ¼ cup beer
  • 3 ounces semi-sweet chocolate, chopped
  • ½ cup cajeta sauce or canned dulce de leche
  • ¼ teaspoon salt

Instructions

  1. Prepare the chocolate sauce by heating beer and chocolate in a saucepan until smooth, then stir in salt and set aside.
  2. In a separate saucepan, combine beer, butter, brown sugar, and salt, and bring to a boil.
  3. Add flour all at once, stirring until the mixture forms a ball and pulls away from the sides of the pan, then cool for 10 minutes.
  4. Beat in the egg and vanilla until well combined.
  5. Transfer the mixture to a piping bag and prepare a cinnamon-sugar mixture in a bowl.
  6. Heat oil in a deep saucepan to 350-375°F.
  7. Pipe 3-inch strips of batter into the hot oil and fry until golden brown, about 5-6 minutes, flipping halfway through.
  8. Drain churros on paper towels and roll in the cinnamon-sugar mixture.
  9. Serve warm with the chocolate sauce.
