Mexican Beer Spiked Churros with Chocolate Dulce De Leche

Instructions
- Prepare the chocolate sauce by heating beer and chocolate in a saucepan until smooth, then stir in salt and set aside.
- In a separate saucepan, combine beer, butter, brown sugar, and salt, and bring to a boil.
- Add flour all at once, stirring until the mixture forms a ball and pulls away from the sides of the pan, then cool for 10 minutes.
- Beat in the egg and vanilla until well combined.
- Transfer the mixture to a piping bag and prepare a cinnamon-sugar mixture in a bowl.
- Heat oil in a deep saucepan to 350-375°F.
- Pipe 3-inch strips of batter into the hot oil and fry until golden brown, about 5-6 minutes, flipping halfway through.
- Drain churros on paper towels and roll in the cinnamon-sugar mixture.
- Serve warm with the chocolate sauce.
