Ingredients

  • 2 cups Oat flour
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ cup Butter, softened
  • ½ cup Brown sugar or coconut sugar
  • ¼ cup White sugar
  • 1 large Egg
  • ½ cup Chocolate chips

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the dry ingredients and mix well.
  3. In a separate bowl, cream together the softened butter and brown sugar until smooth, then add the egg and mix.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined, then fold in the chocolate chips.
  5. Cover the bowl and chill the dough for 30 minutes.
  6. Scoop out heaping tablespoons of dough and place them on the lined baking tray, pressing them into cookie shapes.
  7. Bake for 10-12 minutes until lightly golden around the edges.
  8. Let the cookies cool on the tray for 10 minutes before transferring them to a wire rack to cool completely.
