Ingredients

  • cup oat flour
  • 2 tablespoons tapioca flour
  • 2 teaspoons baking soda
  • ¼ teaspoon sea salt
  • ½ cup softened butter
  • ½ cup cane sugar
  • ½ cup brown sugar
  • 3 tablespoons unsweetened apple sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips or chunks

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the oat flour, tapioca flour, baking soda, and sea salt.
  3. In another bowl, beat the softened butter and sugars until fluffy.
  4. Add the apple sauce, apple cider vinegar, and vanilla to the butter mixture and beat until combined.
  5. Gradually mix in the flour mixture until well combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of dough onto a parchment-lined cookie sheet.
  8. Bake for 11-13 minutes until golden, watching closely after 11 minutes.
  9. Allow to cool before enjoying.
