Instructions
- Preheat the oven to 375 degrees.
- Whisk together the oat flour, baking soda, baking powder, and salt in a small bowl and set aside.
- In a large bowl, beat the vegan butter, brown sugar, and white sugar until well combined, then add the egg and vanilla extract, and mix well.
- Gradually add the flour mixture to the wet ingredients and mix until combined, scraping down the sides as needed.
- Stir in the chocolate chips using a wooden spoon until evenly distributed.
- Use a 1 tablespoon cookie scoop to place the dough on a baking sheet, spacing the cookies evenly.
- Bake for 10 to 12 minutes until set and golden brown, adjusting for desired softness or crispiness.
- Cool the cookies on a wire rack before storing in an airtight container.
