Ingredients

The cookie dough

  • 1 Tbsp flaxseed meal
  • 2 Tbsp water
  • ¾ cup soy protein powder
  • ¼ cup coconut flour
  • 1/8 cup coconut flour
  • 3 Tbsp granulated sweetener
  • ½ tsp salt
  • 3 Tbsp applesauce
  • ¾ cup milk of choice
  • 2 Tbsp coconut oil
  • 2 Tbsp water
  • 1 Tbsp vanilla or almond extract
  • ½ tsp baking soda
  • 2 tsp lemon juice
  • cup chocolate chips

The brownies

  • cup vanilla or unflavored whey protein powder
  • cup vanilla or unflavored soy protein powder
  • cup coconut flour
  • ¼ cup oat flour
  • 2 Tbsp granulated sweetener
  • ½ cup unsweetened cocoa powder
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • cup plain Greek yogurt
  • ¼ cup milk of choice
  • 1 Tbsp butter
  • ¼ cup water
  • 1 tsp lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare an 8"x8" baking pan.
  2. Mix flaxseed meal and water to create a flax egg and set aside.
  3. In a bowl, whisk together the protein powder, coconut flour, sweetener, and salt for the cookie dough.
  4. Melt coconut oil if necessary and combine it with applesauce, milk, water, and extract in a separate bowl.
  5. Add the flax egg to the wet mixture and combine.
  6. Mix baking soda and lemon juice, then add to the wet ingredients.
  7. Combine wet and dry ingredients for the cookie dough and refrigerate.
  8. In another bowl, whisk together the protein powders, flours, sugar, cocoa, baking soda, baking powder, and salt for the brownies.
  9. Cream together yogurt, milk, and butter, then stir in water, lemon juice, and extract.
  10. Combine wet and dry ingredients for the brownies and pour into the baking pan.
  11. Bake brownies for 5 minutes, then remove from oven.
  12. Lower the oven temperature to 325°F and fold chocolate chips into the cookie dough.
  13. Spread the cookie dough over the brownies and return to the oven.
  14. Bake for an additional 18-20 minutes until the edges are golden brown.
  15. Let cool completely before slicing.
