Instructions
- Preheat the oven to 350°F and prepare an 8x8 inch baking pan.
- Make the flax egg by combining flaxseed meal and water in a small bowl.
- In another bowl, mix the protein powder, coconut flour, sweetener, and salt.
- Melt the coconut oil if needed and combine it with applesauce, milk, water, and extract in a separate bowl.
- Add the flax egg to the wet ingredients and mix well.
- Combine the baking soda and lemon juice, then add to the wet mixture.
- Mix the wet and dry ingredients for the cookie dough and refrigerate.
- For the brownies, whisk together the protein powders, flours, sweetener, cocoa, baking soda, baking powder, and salt in a large bowl.
- Cream together the yogurt, milk, and butter, then stir in the water, lemon juice, and vanilla extract.
- Combine the wet and dry ingredients for the brownies and pour into the prepared pan.
- Bake the brownies for 5 minutes, then remove from the oven.
- Lower the oven temperature to 325°F and fold chocolate chips into the cookie dough.
- Spread the cookie dough over the brownies and return to the oven.
- Bake for an additional 18-20 minutes until the cookie dough is lightly golden.
- Let cool completely in the pan before slicing.
