Creamy Mocha Custard

Instructions
- Whisk together egg yolks and honey in a large pot.
- Add cream and sea salt, then heat the mixture over medium-high until it boils.
- Cook while stirring until thickened, about 5-8 minutes, then remove from heat.
- Stir in coffee and vanilla extract.
- Reserve ¾ cup of the mixture for topping.
- Add chocolate to the remaining custard and stir until melted and smooth.
- Divide the chocolate custard into six glasses and freeze for 1 hour.
- Pour the reserved vanilla custard over the chocolate custard and freeze until set, about 2 hours.
