Creamy Mocha Custard

Ingredients

  • 3 egg yolks egg yolks
  • ½ cup honey
  • cups heavy cream
  • 1 pinch sea salt
  • ¼ cup brewed black coffee
  • 1 tablespoon vanilla extract
  • 10 ounces semi-sweet or dark chocolate, chopped

Instructions

  1. Whisk together egg yolks and honey in a large pot.
  2. Add cream and sea salt, then heat the mixture over medium-high until it boils.
  3. Cook while stirring until thickened, about 5-8 minutes, then remove from heat.
  4. Stir in coffee and vanilla extract.
  5. Reserve ¾ cup of the mixture for topping.
  6. Add chocolate to the remaining custard and stir until melted and smooth.
  7. Divide the chocolate custard into six glasses and freeze for 1 hour.
  8. Pour the reserved vanilla custard over the chocolate custard and freeze until set, about 2 hours.
