Instructions
- Heat heavy whipping cream in a pot until it reaches a slight boil, then remove from heat and stir in chocolate chips until smooth.
- In a separate bowl, whisk together the egg, egg yolks, and sugar until well combined.
- Combine the chocolate mixture with the egg mixture, then add vanilla extract and Bailey’s Irish Cream, whisking until smooth.
- Place ramekins in a baking dish and fill the dish with hot water to cover halfway up the sides of the ramekins.
- Pour the custard mixture into each ramekin and bake at 275°F for 45 minutes.
- Allow the ramekins to cool to room temperature, then refrigerate for at least 2 hours before serving.
- Before serving, sprinkle sugar on top and use a torch to caramelize it.
