Bailey's Dark Chocolate Custard

Ingredients

  • 3 cups Heavy Whipping Cream
  • 8 oz. Bittersweet Dark Chocolate Chips
  • 1 Large Organic Egg
  • 4 Large Organic Egg Yolks
  • ½ cup Sugar
  • ¼ cup Bailey’s Irish Cream Liqueur
  • 1 tbsp. Vanilla Extract

Instructions

  1. Heat heavy whipping cream in a pot until it reaches a slight boil, then remove from heat and stir in chocolate chips until smooth.
  2. In a separate bowl, whisk together the egg, egg yolks, and sugar until well combined.
  3. Combine the chocolate mixture with the egg mixture, then add vanilla extract and Bailey’s Irish Cream, whisking until smooth.
  4. Place ramekins in a baking dish and fill the dish with hot water to cover halfway up the sides of the ramekins.
  5. Pour the custard mixture into each ramekin and bake at 275°F for 45 minutes.
  6. Allow the ramekins to cool to room temperature, then refrigerate for at least 2 hours before serving.
  7. Before serving, sprinkle sugar on top and use a torch to caramelize it.
