Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Mix the dry ingredients in a medium bowl.
- Whisk the wet ingredients in a small bowl.
- Combine the wet ingredients with the dry ingredients.
- Refrigerate the dough for at least 30 minutes to harden.
- Use a cookie scoop to form 16 cookies and press each cookie down as they won't spread while baking.
- Sprinkle each cookie with coconut sugar.
- Bake for 9-10 minutes, then remove from the oven and enjoy.
