Chewy Chai Cookies

Ingredients

  • 2 ½ cups almond flour
  • ½ cup coconut flour
  • ¼ cup coconut sugar
  • 1 tsp ginger
  • 1 tsp cinnamon
  • ¼ tsp cardamom
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp vanilla
  • ½ cup maple syrup
  • ½ cup melted coconut oil
  • 1 gg egg (or sub flax egg)
  • few tsp coconut sugar for rolling

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the dry ingredients in a medium bowl.
  3. Whisk the wet ingredients in a small bowl.
  4. Combine the wet ingredients with the dry ingredients.
  5. Refrigerate the dough for at least 30 minutes to harden.
  6. Use a cookie scoop to form 16 cookies and press each cookie down as they won't spread while baking.
  7. Sprinkle each cookie with coconut sugar.
  8. Bake for 9-10 minutes, then remove from the oven and enjoy.
