Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Combine all ingredients in a large mixing bowl and mix until creamy.
- Scoop tablespoon-sized dollops onto the baking sheets, leaving space between each cookie.
- Sprinkle additional cinnamon and coconut sugar on top of the cookies.
- Bake for 11-12 minutes until the edges are golden brown.
- Allow cookies to cool completely before removing them from the parchment paper.
- Store in an airtight container at room temperature for about a week.
