Ingredients

  • ¼ cup almond butter
  • ¼ cup coconut oil
  • ½ cup coconut sugar
  • 1 unit egg
  • 1 tsp vanilla
  • 1 cup almond flour
  • cup coconut flour
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground cardamom
  • ¼ tsp ground cloves
  • ¼ tsp salt
  • ½ cup mini white chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a parchment-lined baking sheet.
  2. In a large bowl, combine almond butter, coconut oil, coconut sugar, egg, and vanilla.
  3. In a separate bowl, mix together almond flour and coconut flour.
  4. Add baking soda, spices, and salt to the dry ingredients and mix well.
  5. Pour the dry mixture into the wet ingredients and stir to combine.
  6. Fold in the white chocolate chips.
  7. Refrigerate the dough for at least 30 minutes.
  8. Scoop about 2 tablespoons of dough onto the baking sheet, pressing down slightly.
  9. Bake for 12-14 minutes and let cool completely.
