Ingredients

The cookie dough

  • ½ cup powdered peanut butter
  • ¼ cup water
  • ¼ cup maple syrup
  • ¼ cup natural peanut butter
  • 1 teaspoon vanilla
  • cup oat flour
  • 2 tablespoons vanilla protein powder
  • 1 teaspoon baking powder

Topping

  • sea salt flakes

Instructions

  1. 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. 2. In a medium bowl, whisk together half of the powdered peanut butter and the water, then add maple syrup, peanut butter, and vanilla, whisking until combined.
  3. 3. In a small bowl, mix oat flour, the remaining powdered peanut butter, protein powder, and baking powder.
  4. 4. Combine the dry ingredients with the wet ingredients and stir until a dough forms.
  5. 5. Roll the dough into balls of about 1.5 tablespoons, then flatten them with a wet fork to form cookies.
  6. 6. Bake for 8-9 minutes or until golden brown, then top with sea salt after cooling.
