Ingredients

  • ½ cup peanut butter
  • ¼ cup coconut sugar
  • ¼ teaspoon kosher salt
  • 1 large egg
  • 1 large egg white
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon baking soda
  • ½ cup vanilla whey protein powder
  • 2 tablespoons coconut flour
  • 3 tablespoons mini chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the peanut butter, coconut sugar, salt, egg, egg white, and vanilla extract until well combined.
  3. Sprinkle the baking soda over the mixture and stir in the protein powder and coconut flour until the dough comes together.
  4. Fold in the chocolate chips and adjust the consistency if necessary by adding more protein powder or a splash of milk.
  5. Scoop tablespoonfuls of dough onto the baking sheet and flatten slightly.
  6. Bake for 5 to 6 minutes until the edges are golden and the middles are still soft.
  7. Allow the cookies to cool on the baking sheet for 3 minutes before transferring them to a wire rack.
