Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, mix together the peanut butter, coconut sugar, salt, egg, egg white, and vanilla extract until well combined.
- Sprinkle the baking soda over the mixture and stir in the protein powder and coconut flour until the dough comes together.
- Fold in the chocolate chips and adjust the consistency if necessary by adding more protein powder or a splash of milk.
- Scoop tablespoonfuls of dough onto the baking sheet and flatten slightly.
- Bake for 5 to 6 minutes until the edges are golden and the middles are still soft.
- Allow the cookies to cool on the baking sheet for 3 minutes before transferring them to a wire rack.
