Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- In a large bowl, combine the protein powder, coconut sugar, egg, peanut butter, and baking soda, mixing until a thick dough forms.
- Fold in the chocolate chips or any other desired mix-ins.
- Scoop the dough onto the prepared baking sheet, flattening each mound with hands or a fork.
- Bake for 8 to 10 minutes until lightly golden around the edges.
- Let the cookies cool on the pan for at least 15 minutes before enjoying.
