Peanut Butter Protein Cookies

Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- Combine all ingredients in a medium-sized bowl and mix until the consistency resembles cookie dough.
- Spoon out about 1.5 to 2 tablespoons of dough, roll into a ball, and flatten to form a cookie shape on the baking sheet.
- Optionally, add a few chocolate chips on top of each cookie.
- Bake for 8-10 minutes or until the edges turn golden brown.
- Allow the cookies to cool for 10-15 minutes to firm up.
