Peanut Butter Protein Cookies

Ingredients

  • 1 cup all-natural drippy peanut butter
  • cup coconut sugar
  • 2 large eggs
  • ½ cup vanilla protein powder
  • cup chocolate chips
  • to taste coarse sea salt for topping

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. Combine all ingredients in a medium-sized bowl and mix until the consistency resembles cookie dough.
  3. Spoon out about 1.5 to 2 tablespoons of dough, roll into a ball, and flatten to form a cookie shape on the baking sheet.
  4. Optionally, add a few chocolate chips on top of each cookie.
  5. Bake for 8-10 minutes or until the edges turn golden brown.
  6. Allow the cookies to cool for 10-15 minutes to firm up.
