Grilled Tomatoes

Ingredients

The tomatoes

  • 2 lbs semi-firm tomatoes (Roma, Vine ripened, Better boy, Heirloom)

The marinade

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2–4 cloves fresh garlic (finely minced)
  • 2–3 tablespoons fresh oregano (chopped)
  • ½ teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the grill to medium-high heat and grease it well.
  2. Core the tomatoes and cut them in half.
  3. In a bowl, mix olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper, then coat the tomato halves with this marinade.
  4. Place the tomatoes on the grill, open side down, and grill for 5-7 minutes until grill marks appear.
  5. Turn the tomatoes over and continue grilling until they are tender but not collapsing, about another 5 minutes.
  6. Serve the grilled tomatoes on a platter, drizzling any leftover marinade over them and adding more olive oil and salt if desired.
