Ingredients

The tomatoes

  • 4 large tomatoes

The topping

  • 1 clove garlic
  • 1/2 cup whole-wheat bread, torn into pieces
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped walnuts
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • 3 tablespoons extra-virgin olive oil
  • 1 cup loosely packed basil leaves

Instructions

  1. Preheat the grill to medium-high heat.
  2. Arrange the tomato halves cut side up on a plate.
  3. Mince the garlic and combine with the bread in a food processor to make crumbs.
  4. Add Parmesan, walnuts, pepper, and 1/8 teaspoon salt to the mixture and pulse while drizzling in 2 tablespoons of oil.
  5. Stir in the basil after removing the blade from the processor.
  6. Drizzle the tomatoes with 1 tablespoon of oil and sprinkle with 1/8 teaspoon salt.
  7. Press the breadcrumb topping onto the tomatoes gently.
  8. Oil the grill and place the tomatoes cut side up on it.
  9. Cook for 10-15 minutes until the topping is golden and the tomatoes are tender.
