No-Rise Cinnamon & Orange Rolls

Ingredients

The dough

  • ¾ cup cottage cheese (4% milk fat)
  • cup buttermilk
  • ¼ cup granulated sugar
  • 4 Tbs real butter, melted
  • 1 tsp pure vanilla extract
  • 9 oz flour (about 2 cups); more for rolling
  • 1 Tbs baking powder
  • ½ tsp table salt
  • ¼ tsp baking soda

Orange Roll Filling

  • 4 Tbs butter, softened
  • ½ cup sugar
  • zest from 1 orange

Orange Roll Glaze

  • cup powdered sugar
  • 1 T melted butter
  • 2 T orange juice

Instructions

  1. Preheat the oven to 400°F.
  2. In a food processor, blend cottage cheese, buttermilk, sugar, melted butter, and vanilla until smooth.
  3. Add flour, baking powder, salt, and baking soda; pulse until the dough clumps together.
  4. Transfer the dough to a lightly floured surface and knead until smooth.
  5. Roll the dough into a rectangle, approximately 12x15 inches.
  6. Spread the filling on the dough, then roll it up and slice into pieces.
  7. Place the rolls in a greased pan, preferably ceramic or glass.
  8. Bake for 20-25 minutes until golden brown.
  9. While baking, whisk together glaze ingredients.
  10. Let the rolls cool for a few minutes before spreading the glaze on top.
