Ingredients

  • 1 large Hannah sweet potato (white flesh)
  • ½ cup maple syrup (at room temperature)
  • 6 tablespoons coconut oil (melted)
  • 2-4 tablespoons water
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon apple cider vinegar
  • teaspoon salt

Instructions

  1. Peel and cut the sweet potato into 1-inch chunks.
  2. Steam the potato chunks until fork-tender, about 10-15 minutes.
  3. Mash the steamed sweet potato and pack it into a measuring cup.
  4. Transfer the mashed sweet potato to a blender and add the maple syrup, coconut oil, 2 tablespoons of water, lemon juice, apple cider vinegar, and salt.
  5. Blend until silky smooth, adding more water if necessary to achieve the right consistency.
  6. Transfer the frosting to an airtight container and refrigerate.
  7. Let the frosting thicken overnight before using.
