Ingredients

The sprouts

  • pounds Brussels sprouts, trimmed and halved lengthwise

The marinade

  • 4 tablespoons olive oil
  • 1 tablespoon lemon juice
  • teaspoons kosher salt
  • ¼ teaspoon black pepper
  • teaspoons dried Italian seasoning
  • teaspoons garlic, minced
  • 1 tablespoon parsley leaves, chopped
  • 1 optional lemon wedges for serving

Instructions

  1. Mix olive oil, lemon juice, salt, pepper, Italian seasoning, and minced garlic in a bowl.
  2. Add Brussels sprouts to the bowl and toss to coat, then refrigerate for at least 10 minutes.
  3. Thread the marinated sprouts onto skewers.
  4. Preheat the grill or grill pan to medium-high heat.
  5. Grill the skewers for 3-4 minutes on each side until browned and tender.
  6. Serve the skewers on a plate, garnished with parsley and lemon wedges if desired.
