  • ½ cup heavy cream, heated
  • ½ tsp. vanilla extract
  • 1 Tbsp. butter, softened

Instructions

  1. 1. Whisk together the sugar, corn syrup, water, and lemon juice in a microwave-safe measuring cup or glass bowl until combined.
  2. 2. Microwave on high for 5 to 8 minutes until the mixture begins to turn a light golden color, watching carefully to avoid overcooking.
  3. 3. Remove from the microwave and let it rest for 3-5 minutes until it turns a deep amber color.
  4. 4. Gradually add about a tablespoon of the heated cream, whisking to combine as the caramel bubbles.
  5. 5. Continue adding the cream slowly until fully incorporated, then add the vanilla and butter, whisking to combine.
  6. 6. Serve immediately warm or let it sit to thicken at room temperature.
  7. 7. Store in a jar or sealed container in the refrigerator for up to 2 weeks.
