Instructions
- 1. Whisk together the sugar, corn syrup, water, and lemon juice in a microwave-safe measuring cup or glass bowl until combined.
- 2. Microwave on high for 5 to 8 minutes until the mixture begins to turn a light golden color, watching carefully to avoid overcooking.
- 3. Remove from the microwave and let it rest for 3-5 minutes until it turns a deep amber color.
- 4. Gradually add about a tablespoon of the heated cream, whisking to combine as the caramel bubbles.
- 5. Continue adding the cream slowly until fully incorporated, then add the vanilla and butter, whisking to combine.
- 6. Serve immediately warm or let it sit to thicken at room temperature.
- 7. Store in a jar or sealed container in the refrigerator for up to 2 weeks.
