Instructions

  3. Once golden brown, stir in the heavy cream and vanilla carefully, as it will bubble up.
  4. Continue cooking until the mixture reaches 225°F on a candy thermometer.
  5. To cool the caramel quickly, transfer it to a bowl set in ice water, ensuring no water gets into the caramel.
  6. Serve the caramel sauce over your favorite desserts.
