Caramel Sauce

Instructions
- In a medium saucepan, combine sugar and enough water to soak the sugar.
- Heat on medium and stir until the sugar dissolves and the water is clear.
- Cook without stirring until the mixture turns amber, about 10 minutes, swirling the pot as needed.
- For a deeper color, cook for an additional 2 minutes.
- Warm the heavy cream in the microwave or stovetop.
- Reduce heat and whisk in the heavy cream and butter into the saucepan, stirring until fully incorporated.
- Stir in vanilla extract if desired, then remove from heat and let cool to room temperature.
- Store in a jar or airtight container; it can be kept at room temperature for 2-3 days, refrigerated for up to a month, or frozen for 3 months.
